Just because there’s an inch of snow on the ground doesn’t mean you can’t enjoy the feel and flavor of Summer! Brave the cold and grill outdoors (it burns extra calories!) or prepare these grilled shrimp skewers in a stovetop grill pan – a must have in every healthy kitchen.
- 1/2 cup olive oil
- 1/2 teaspoon cayenne pepper powder
- 2 cloves garlic, crushed
- 12 large shrimp, peeled and deveined
- 1 lime
- salt and pepper to taste
In a small bowl, whisk together the olive oil, pepper and garlic. Cut the lime in half and with one half, cut into small wedges. Using wooden skewers, alternate the shrimp and lime wedges (5-6 shrimp on each skewer). Brush with the marinade and season with salt and pepper to taste. Grill on high heat for about 1-2 minutes per side, or until the shrimp is lightly pink and cooked through. Serve over a bed of greens with your favorite dressing and enjoy!
